👩🍳 Instructions
- 1 Steam the purple sweet potato until tender, then mash it while still hot
- 2 Mix the mashed sweet potato with the all-purpose flour, cornstarch, sugar, and salt
- 3 Knead until the dough is smooth and can be shaped
- 4 Take a golf ball-sized portion of dough and flatten it in your palm
- 5 Place 1 piece of mozzarella in the center
- 6 Roll it into a tight ball, making sure the cheese is completely covered
- 7 Roll it in flour, dip it in beaten egg, then coat it in panko
- 8 Repeat the double coating for extra crispiness: egg → panko again
- 9 Freeze for 30 minutes
- 10 Fry in oil at 170°C (340°F) for 3-4 minutes until golden
- 11 Serve immediately while the cheese is still melty
- 12 Cut it open slightly so the cheese pull shows — perfect for photos!
