- 400g canned chickpeas, or 200g dried chickpeas soaked overnight and boiled
- 4 tbsp tahini (sesame paste)
- 3 tbsp fresh lemon juice
- 3 cloves garlic
- 4 tbsp extra virgin olive oil
- 1/2 tsp ground cumin
- Salt to taste
- 3-4 tbsp cold water (from the chickpea cooking liquid)
- Toppings: extra virgin olive oil, paprika powder, chopped parsley, a few whole chickpeas
- Pita bread, for serving

👩🍳 Instructions
- 1 If using dried chickpeas: soak overnight, then boil with a little baking soda until very tender; drain and reserve the cooking water
- 2 If using canned chickpeas: drain and rinse
- 3 Peel off some of the chickpea skins for a smoother hummus (optional but recommended)
- 4 Add the chickpeas, tahini, lemon juice, garlic, cumin, and salt to a blender
- 5 Blend, pouring in cold water a little at a time, until the texture is very smooth and creamy
- 6 Taste and adjust the lemon, salt, and tahini as needed
- 7 Spread onto a flat plate and make a circular swirl with the back of a spoon
- 8 Drizzle olive oil over the top
- 9 Sprinkle with paprika, parsley, and whole chickpeas
- 10 Serve with warm pita bread
💡 Tips
• The chickpeas must be very soft and tender — this is the key to smooth hummus
• Good-quality tahini is worth the investment: choose one that's light in color and not bitter
• Add a few ice cubes while blending for an even lighter, creamier texture
