- 200ml coconut milk
- 2 eggs
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 leaf pandan leaf, extract the water
- Banana leaves for lining the molds

👩🍳 Instructions
- 1 Dissolve the palm sugar in warm coconut milk, then strain
- 2 Beat the eggs until foamy
- 3 Combine the rice flour, baking powder, and salt
- 4 Pour the palm sugar-coconut milk mixture into the flour mixture
- 5 Stir well, then fold in the beaten eggs
- 6 Add the pandan water
- 7 Add the grated coconut and mix well
- 8 Prepare small molds or bowls lined with banana leaves
- 9 Pour the batter into the molds, filling them 3/4 full
- 10 Steam over high heat for 20-25 minutes until cooked through
- 11 Test with a toothpick — if it comes out clean, the cake is done
- 12 Remove from the steamer, let cool briefly, and serve
💡 Tips
• The palm sugar must be completely dissolved and strained so there are no lumps
• Steam over high heat so the cake rises perfectly
• Ladu tastes best eaten the same day — fresh from the steamer
