- 1 Beat the butter and powdered sugar together until pale.
- 2 Add the egg yolks and beat until well combined.
- 3 Add the grated Edam cheese and mix well.
- 4 Sift the sago flour and cornstarch together, then add to the batter.
- 5 Mix with a spatula until combined — the dough will feel sandy.
- 6 Take a small amount of dough, roll into a ball, and arrange on a baking sheet.
- 7 Press the center slightly, then place a cube of cheese on top.
- 8 Bake in the oven at 140°C (285°F) for 20-25 minutes.
- 9 Don't let them brown — the sago cheese cookies should stay pale and dry.
- 10 Be careful when removing them from the pan since they're very fragile — let them cool first.
💡 Tips
• Make sure to use sago flour labeled 'TANI,' not regular sago flour — the results are very different.
• Don't set the oven too hot, or the cookies will spread too much.
• Store in an airtight container to keep them crisp for weeks.
