👩🍳 Instructions
- 1 Roast the shelled peanuts in a dry skillet (no oil) over low heat for 8-10 minutes, stirring constantly until cooked and fragrant. Let cool, then coarsely grind using a food processor or by crushing them (don't turn it into a smooth paste—just small bits).
- 2 Beat the butter and the powdered sugar for the dough using a mixer on low speed for 1-2 minutes, just until combined and smooth. Don't overbeat until pale and fluffy, as this will cause the cookies to spread while baking.
- 3 Add the ground peanuts, milk powder, vanilla, and salt to the butter mixture, and stir well with a spatula.
- 4 Add the sifted all-purpose flour and cornstarch in 2-3 batches, mixing with a spatula or your hands until you get a dough that can be shaped into balls and doesn't stick to your hands.
- 5 Weigh out about 8-9 grams of dough per piece, roll into balls with your hands until the surface is smooth and neat, and place on a baking sheet lined with parchment paper, spacing them 2 cm apart.
- 6 Bake in a preheated oven at 150°C (300°F) for 20-25 minutes on the middle rack, until the bottoms of the cookies are golden brown while the tops are still pale (don't wait for the tops to change color).
- 7 Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes until slightly set (the cookies are still very fragile while hot), then transfer to a wire rack.
- 8 While still warm, roll each cookie in the powdered sugar for coating until evenly covered, then let them cool completely and roll them once more for a thicker sugar coating.
- 9 Store the cookies in an airtight container once completely cool so they stay crisp and the powdered sugar doesn't melt.
💡 Tips
• Make sure the butter is at room temperature but not melted, so the dough isn't too soft and the cookies don't spread while baking.
• Don't overmix when beating the butter and sugar—just mix until combined so the cookies stay crumbly and don't turn out hard.
• Roll the cookies in powdered sugar twice: once while warm and once after they've cooled, for a thicker sugar coating that won't fade away easily.
• Keep the roasted peanuts in a covered container before grinding so they don't go soft and lose their maximum aroma.
