- 200 g Shortcrust pastry: all-purpose flour
- 100 g cold butter, cut into cubes
- 30 g powdered sugar
- 1 egg yolk
- 2-3 tbsp ice water
- A pinch Salt
- 1.2 kg Apple filling: Golden Delicious or Fuji apples (6-7 apples)
- 150 g granulated sugar
- 80 g butter
- 1/4 tsp cinnamon
- 1 tbsp lemon juice
- Fresh cream or vanilla ice cream, for serving

👩🍳 Instructions
- 1 Pastry: mix together the flour, sugar, and salt
- 2 Add the cold butter and rub it in with your fingers until the mixture resembles coarse sand
- 3 Add the egg yolk and ice water, and knead briefly just until it comes together
- 4 Wrap in plastic and refrigerate for 30 minutes
- 5 Apples: peel, quarter, and remove the cores
- 6 Melt the sugar in a 24 cm oven-proof skillet (cast iron is ideal) until it turns into amber caramel
- 7 Add the butter and stir carefully
- 8 Arrange the apples tightly on top of the caramel, then sprinkle with cinnamon
- 9 Cook on the stovetop for 10 minutes until the apples are half-softened and infused with the caramel
- 10 Roll out the pastry into a circle slightly larger than the skillet
- 11 Cover the apples with the pastry, tucking the edges in toward the inside
- 12 Bake at 400°F (200°C) for 25-30 minutes until the pastry is golden
- 13 Remove from the oven and immediately flip onto a serving plate while still hot
- 14 Serve with fresh cream
💡 Tips
• Flip the tarte tatin IMMEDIATELY after it comes out of the oven — if you wait, the caramel will harden and the apples will stick to the skillet
• Use a cast iron skillet or any oven-safe pan
• Golden Delicious apples aren't too tart and hold their shape well when cooked — the best choice
