These little round bites are made from a blend of roasted almonds, dates, and pure cocoa with absolutely no added sugar.   • 200 grams Medjool dates, pitted
  • 150 grams unsalted roasted almonds
  • 30 grams pure unsweetened cocoa powder
  • 2 tbsp coconut oil, melted
  • 1/2 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 2 tbsp water, boiled and cooled
  • 30 grams roughly chopped almonds, for coating

  1. 1 Soak the dates in warm water for 10 minutes if they're firm, then drain and remove the pits.
  2. 2 Put the roasted almonds into a food processor and process for 30-45 seconds until they turn into a coarse, sand-like texture.
  3. 3 Add the dates, cocoa powder, melted coconut oil, cinnamon, and salt to the food processor. Process for 2-3 minutes until the mixture comes together and can be shaped, with a sticky texture like thick dough.
  4. 4 If the mixture is still too dry and won't come together, add the cooled boiled water 1 tbsp at a time, processing again until the mixture can be pressed together by hand without falling apart.
  5. 5 Scoop about 1 heaping tbsp of the mixture and roll it into a ball using your palms, lightly moistened with a little water to prevent sticking. Repeat until all the mixture is used (about 16-18 balls).
  6. 6 Roll each ball over the roughly chopped almonds until the surface is evenly coated.
  7. 7 Arrange the balls in an airtight container lined with parchment paper, then chill in the fridge for at least 30 minutes to firm up and set before serving.
