- 1 Boil the water together with the ginger, lemongrass, and pandan leaves for 10 minutes until fragrant
- 2 Add the shaved palm sugar and stir until dissolved
- 3 Pour in the coconut milk and keep stirring over low heat
- 4 Don't let it boil, so the coconut milk doesn't separate
- 5 Cook while stirring for about 10 minutes until everything is well combined
- 6 Strain into glasses or a teapot
- 7 Serve hot in glasses, topped with boiled kolang-kaling and young coconut
- 8 Drink while still warm
💡 Tips
• Keep stirring as you add the coconut milk so it doesn't separate
• Using real palm sugar makes the bajigur taste much richer
• It's best enjoyed at night when the weather is cool
