A healthy fried rice that's perfect for lunchboxes, made with teri medan (crispy dried anchovies) as a calcium source and packed with vegetables! It has a naturally savory flavor without any MSG, and the carrots and green onions give it a beautiful color. Using leftover overnight rice makes it even more practical and keeps the texture from getting mushy.

- 300g cold cooked white rice (leftover overnight rice works best)
- 30g teri medan (crispy dried anchovies)
- 1 egg
- 1 stalk carrot, cut into small cubes
- 50g green peas (frozen is fine)
- 2 stalks green onion, sliced
- 2 clove garlic, minced
- 3 shallots, thinly sliced
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tsp soy sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp cooking oil

👩🍳 Instructions
- 1 Fry the dried anchovies in a little oil until crispy, then set aside
- 2 Sauté the shallots and garlic until fragrant
- 3 Add the carrot and green peas, and stir for 2 minutes
- 4 Push the vegetables to the side of the pan, then add the egg and scramble it
- 5 Add the rice and stir well over high heat
- 6 Add the sweet soy sauce, soy sauce, salt, and pepper
- 7 Stir well for 3-4 minutes until the rice grains separate
- 8 Add the crispy anchovies and green onion, then stir briefly
- 9 Remove from heat and pack into the lunchbox once it has cooled slightly
💡 Tips
• Use cold, leftover overnight rice so the result doesn't turn out mushy
• The small teri medan anchovies are better suited for kids since they're not too salty
• You can substitute sweet corn for the green peas
• Let the fried rice cool completely before closing the lunchbox lid to prevent condensation
