👩🍳 Instructions
- 1 Prepare a square baking pan about 8x8 inches (20x20 cm), lining it with parchment paper so the sides are covered too, making it easy to lift out later.
- 2 In a small saucepan over low heat, melt the butter together with the brown sugar and honey, stirring constantly until the sugar dissolves and the mixture comes together, about 3-4 minutes. Don't let it boil over.
- 3 Remove from heat, then add the peanut butter, salt, and vanilla powder. Stir quickly until well combined and the texture becomes smooth.
- 4 Add the oats little by little into the peanut butter mixture, stirring with a spatula until all the oats are fully coated and the mixture feels thick and sticky.
- 5 Pour the mixture into the prepared pan. Flatten it with the back of a spoon or spatula, pressing firmly and evenly so it holds together well when sliced later.
- 6 Melt the dark cooking chocolate together with the vegetable oil using a double boiler method (heat water in a pot, place a bowl of chocolate on top without letting it touch the water), stirring until smooth and glossy.
- 7 Pour the melted chocolate evenly over the surface of the oat mixture, spreading it with a spatula. Sprinkle roasted chopped peanuts on top if you like extra texture.
- 8 Place the pan in the refrigerator for at least 2 hours, or until the chocolate has completely hardened and the oat layer has set firmly.
- 9 Lift it out of the pan using the parchment paper as handles, place it on a cutting board, then cut into bars to your desired size using a sharp knife that's been slightly warmed for clean cuts.
- 10 Store the remaining bars in an airtight container in the refrigerator and serve chilled or at room temperature.
💡 Tips
• Use peanut butter with a thick, not overly oily texture so the mixture is easy to press together.
• Press the oat mixture into the pan as firmly as possible—the more compact it is, the neater the slices will be later and the less likely they'll fall apart.
• For clean cuts, warm the knife with hot water and dry it before slicing the chilled bars.
• These bars can be stored in the freezer for up to 3 weeks; just let them sit out for 10 minutes before eating so the texture softens back up.
