- 1 piece sweet corn, cut into 4 pieces
- 1 piece chayote, diced
- 100g long beans, cut into 3cm pieces
- 50g peanuts
- 50g melinjo nuts
- 2 pieces green tomatoes, cut
- 1 leaf bay leaf
- 2-inch piece galangal, crushed
- 1 liter water
- 2 tbsp tamarind pulp, dissolved in water
- 5 Ground spice paste: shallots
- 3 clove garlic
- 1 tsp roasted shrimp paste (terasi)
- 2 pieces red chilies
- 1 tbsp palm sugar
- 1 tsp salt

👩🍳 Instructions
- 1 Bring water to a boil, then add the corn and peanuts first since they take the longest to cook
- 2 Cook for 10 minutes, then add the melinjo nuts and chayote
- 3 Briefly sauté the ground spice paste until fragrant, then add it to the pot
- 4 Add the bay leaf and galangal
- 5 Once the chayote is tender, add the long beans and tomatoes
- 6 Pour in the tamarind water
- 7 Cook for another 5 minutes, then adjust the seasoning to taste
- 8 Remove from heat and serve with warm steamed rice
💡 Tips
• Add the vegetables in stages according to their cooking time so none of them turn out too mushy
• Fresh tamarind pulp gives the broth a bolder, more vibrant flavor
• It tastes even better the next day once the flavors have had time to soak in
