👩🍳 Instructions
- 1 Crepe wrapper: mix the flour, egg, milk, salt, and melted margarine — stir until smooth
- 2 Make thin crepes one at a time in a nonstick pan
- 3 Ragout: melt the margarine, add the flour, and stir quickly
- 4 Pour in the milk little by little while stirring so it doesn't get lumpy
- 5 Add the chicken, carrot, green beans, salt, pepper, and nutmeg
- 6 Stir until thick, and it will firm up once it cools
- 7 Take one crepe sheet and spoon the ragout into the center
- 8 Fold in the left and right sides, then roll up tightly
- 9 Dip in the beaten egg, then coat in breadcrumbs
- 10 Fry in medium-hot oil until golden brown
- 11 Drain, then slice diagonally before packing into the lunchbox
💡 Tips
• The ragout must be completely cool and firm before wrapping it in the crepe — if it's still runny, it will leak out
• You can freeze the rolls before frying — they'll keep for 2 weeks
• Fry straight from frozen without thawing first
• You can swap the crepes for spring roll wrappers if you want an easier option
