- 6 clove Ground spice paste: garlic
- 4 shallots

- 1 Boil the beef in boiling water until tender, about 45 minutes
- 2 Remove the beef, cut into pieces, and strain the broth
- 3 Sauté the ground spice paste until fragrant, then add the bay leaves, lemongrass, and galangal
- 4 Pour in the broth and bring to a boil
- 5 Add the beef pieces and white radish
- 6 Cook until the radish is tender, about 10 minutes
- 7 Adjust the seasoning with salt
- 8 Serve topped with fried soybeans, fried shallots, scallions, and celery
- 9 Add a squeeze of lime juice
